Egusi
- EGUSI is the name for the fat - protein-rich seeds which after being dried and grounded are used as a major ingredient in West African food.
- Its high content of essential fatty acids and its positive health benefits on serum lipids.
- Egusi is a soup thickened with the grounded seeds and popular in West Africa typically contains leafy vegetables, Palm oil, Seasonings, Locust beans (optional) and the meat commonly used are beef, goat, fish, shrimps, crayfish.
- In Nigeria, Egusi is common among the people of southeastern Nigeria, the Ibibio, the Efik (Calabar) of southern Nigeria, Hausa and also the Yoruba’s.
- In Ghana, Egusi is also called Akatoa of Agushi, and as in Nigeria is used for soup and stew, and most popularly in palaver sauce.
